It all begins with the fifty years of experience in fish farming of the Bettinazzi family, which has been active in the sector for three generations.

The sturgeon is a protected species that is no longer allowed to fish in nature, so we start from four farms that extend over twenty hectares (we visited the part located in the heart of the Mincio Park), a production chain based on water always fresh springs and resurgences and sliding farms that allow the sturgeons to swim against the current guarantee a final product, both in terms of meat and the quality of the caviar that is obtained from the same fish, with a very high organoleptic balance.
